Iced oatmeal bars
What You’ll Need
For The Bars
1/2 cup unsalted butter
1 cup old fashioned oats
1 cup + 2 tbsp all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup sugar
1/2 cup light brown sugar, packed
1 large egg, room temperature
1 tsp vanilla
1 tbsp molasses, you can use honey but trust me- use molasses
For the Icing
1/2 cup powdered sugar
1-2 tbsp milk
1/4 tsp vanilla
Instructions
Preheat your oven to 350°F.
Line your 8x8 baking pan with parchment paper.
*Don’t skip this step even though you want to- you need to get these out of the pan easily to cool quickly after baking so you can ice them. Quicker cooling time = less time between baking & icing = quicker to enter mouth. So, just do it.Melt your butter and pour into a medium size bowl to cool.
Add your oats to a food processor or blender. You want to chop your oats into smaller bits. Don’t go crazy though, we don’t want oat flour, we’re just looking for smaller size oat pieces.
Once you’re done chopping the oats, add them to a second bowl along with the baking soda, cinnamon, flour & salt. Whisk it all together until combined well.
Add your sugar & brown sugar to the bowl with the melted butter. Mix this with a whisk or on low speed for a minute- you want a wet sandy texture.
To the wet sand- add your egg, vanilla & molasses & combine everything well.
Add your dry ingredients to your sugar mixture. Fold all the ingredients together until the flour is completely incorporated into the mixture. Don’t over mix.
Transfer your dough into your baking pan & make sure your dough is evenly distributed in the pan.
Bake for 20-24 minutes. You want the edges to be set & the top golden brown.
After cooking, remove the bars with the parchment paper and set on a cooling rack until they are room temperature and no longer warm. You want them to be completely cool before putting the icing on.
For The Icing:
Once your bars are completely cool, make your icing.
In a bowl, sift your powdered sugar & add your milk and vanilla. Whisk together until completely combined. You don’t want really runny icing for these bars.
*If you feel like your icing is too runny, add a little powdered sugar and whisk again.
If you feel like your icing is too thick then add a touch of milk and whisk again.Once you have the icing ready, drizzle with a spoon over the bars.
This is the hardest part- let your icing set on your bars before slicing them.
Once the icing set- slice em up and try not to eat them all at once. It’s harder than you might think.
