HEALTHY STARBUCKS COFFEE CAKE


What You’ll Need

Crumble:

  • 1/3 c coconut sugar

  • 2/3 c almond flour

  • 1.5 tsp ground cinnamon

  • 1/4 tsp salt

  • 3 tbsp avocado oil

Cake:

  • 2 c almond flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp fine grain sea salt

  • 4 eggs

  • 2/3 c maple sugar

  • 1.5 tsp vanilla extract

  • 1/2 c greek yogurt (can sub 1/4 c olive oil if dairy free)


Instructions

  1. Mix together all crumble ingredients until a wet sand texture forms (clump with your fingers)

  2. Set aside

  3. In a new bowl, stir together all cake ingredients except greek yogurt until very smooth

  4. Fold in greek yogurt

  5. Pour half the batter in a parchment lined 9x9” pan

  6. Sprinkle on a layer of the crumble

  7. Top with remaining half of the batter then sprinkle more crumble on top

  8. Bake at 350F for 35-45 minutes or until a toothpick slid through the center come out clean and it no longer jiggles.

  9. If top starts browning before it’s done in the center then cover loosely with foil.

  10. Let cool completely before serving.
