Chemical Free Marshmallows


What You’ll Need

  • 3 TBS organic gelatin powder

  • 1 cup water

  • 1 cup honey

  • 1 pinch salt

  • 1 tsp peppermint extract or vanilla extract

  • 2 TBS arrowroot powder


Instructions

  1. Mix 3 TBS of gelatin with 1/2 cup of water in the bottom of your mixer.

  2. While that blooms, in a small pot, combine the remaining 1/2 cup of water with 1 cup of honey. Bring to a boil. Watch the pan to be sure the mixture doesn’t boil over. If you’re using a thermometer, bring the temperature to 240 ° F.

  3. Add the boiling honey mixture to the bloomed gelatin and immediately start mixing using either a handheld mixer or a stand mixer. Start on medium with stand mixer until it comes together, and then turn it up.

  4. You will mix the ingredients for about 8 to 10 minutes total.

  5. You’ll start to see the mixture turn into a melted Marshmallow consistency, which reminds me of “Fluff spread” from my childhood. You want it to be still pourable.

  6. Midway through, add a pinch of salt and whichever flavour you desire. Peppermint extract made a fantastic addition to our hot chocolate, but the vanilla marshmallows are a close replica of your typical marshmallow.

  7. In an 8x8 baking dish lined with parchment paper, sprinkle 1 TBS arrowroot powder over the bottom of the dish. This will prevent the marshmallows from sticking.

  8. Pour the marshmallow mixture into a dish and spread out with the back of a spatula.

  9. Let marshmallows set on the counter for 4hrs

  10. Once set, remove from the dish using the parchment paper as handles.

  11. Sprinkle the remaining arrowroot over the to prevent it from sticking, and then dust off the extra.

  12. Cut & enjoy.
