Avocado Mayo


What You’ll Need

  • 2 egg yolks

  • 1 cup avocado oil

  • 1 tbsp dijon mustard

  • 3 tbsp fresh lemon juice

  • 1/2 tsp salt

  • 1/2 tsp garlic powder

  • 1/4 tsp pepper


Instructions

  1. Add all ingredients to a wide mouth mason jar

  2. Insert the immersion blender into the bottom of the jar over the top of the egg yolks

  3. Blend on high

  4. Leave the immersion blender on the bottom for about 20-30 seconds until the whole bottom is white

  5. Slowly lift it up and continue blending until the mixture has thickened and fully combined

  6. Store in the fridge for 1 week
